Well being it is Mother’s Day and she got to choose, I was handed a couple of large NY Strips, so no pellets but on the grill. Will be served with baby potatoes and some pasta salad. I will attempt a picture if I can get one without getting bit. 🤣
I am in the same mind set that @SmokeZilla mentioned above. I have cut racks in half without any issues that anyone noticed.
I did see this from RT some time back. Have never tried it and although it is done on a Bullseye, which I do not have, I would think, prep aside a person could adapt this.

As @SmokeZilla said Costco and this was a huge package that my better half found. She is a beef whisperer of sorts. I can’t remember how they are labeled but they are flanken cot or cut across the bones. I have varied my process but liked this one.

I failed to remember or maybe SWSNBN forgot it is Cinco, which normally spawns Mombo Taxies and carnitas or other dish’s. In stead I was told I was cooking flanken cut, cross cut, whatever ribs. So I opted for a dusting of Holy Gospel, with W Sauce for a slow cook.
