    Thanks! It’s not cast iron. It looks like carbon steel or a low grade stainless. Still season it? Should have said that originally.

    Thank you sir. The first cook thighs came out unbelievable. Probably go low and slow with pulled pork this weekend. Aaron Franklin has a great video on pulled pork brisket style. You may never go back to southern seasoning again!

    Ok, so I just did my burn in and first chicken thigh cook. I cleaned the grill grates but I am a tad confused about what else should I clean. The deflector plate is greasy as are the sides of the barrel. Do I clean them or do I leave it as seasoning.
